Two Lemons of Pure Happiness

I know it is the day before Christmas,
and I still have some cooking to do for our Christmas eve feast.... you can see more of that here.

BUT
last night I discovered the best ever lemon bar recipe ...
THE BEST.


I had the kitchen to myself last night.... a rare pleasure!!
So, I took time to make up a few last minute treats.
if you knew me well,
then you'd know that I love a good lemon recipe!!





...and this recipes for lemon bars was just too easy.

Trust me, these are absolutely delicious.
I did not have an organic lemon but I scrubbed away at the one we did have....
because the whole lemon is used which really gives it a wonderful lemony flavour.

    Thanks for the recipe. We have lemons ready to picked off the tree. Maybe I can make them at my sister's since my kitchen is in the works. I will have to adjust the recipe a little because my daughter can't have gluten, but that's pretty easy for me now.

    I think your kitchen should be in a magazine. I love it.

    1. Ahh....you are so sweet. It took a lot of magazine perusing to come up with the design and keep it within our budget....which was limited with a capital L.
      Tell me how the recipe turns out in a gluten-free version. I am curious.

    2. Speaking of gluten-free, I made GF peanut butter, chocolate chip, pecan cookies for my daughter several days ago. Alas (one of my favorite words, Alas!) the cookies burned on the bottom, maybe I didn't adjust for the high altitude here?, but I had left-over batter so made bars, similar to brownies, and they were way past delicious so the day was saved.
