LAST DAY of Christmas Cookie Week

I thought I would share a few of our other Christmas decorations through some Instagram photos.
This is our sap bucket next to the door with some pine boughs, dogwood branches and a burlap bow.


 In the diningroom we have filled in the chandelier with more fresh greenery.


Back to Cookie Week....
Well, it was a debate on what the final cookie of the week would be,
a toss up between the gingerbread cookies which is still in dough form in the fridge
or the very easy pecan melts.

And the pecan melts won!
Why?
Well, we have had an "easy" theme going and these fall right into that category.



Preheat oven to 300 degrees F

Ingredients

1 cup of flour
1 cup of finely chopped pecans (toasted are better)
1 half  cup of butter
1 half cup of brown sugar (depends on how sweet a tooth you have)
1 teaspoon of vanilla

Mix all ingredients together.
Roll into small balls and bake for approximately 12 - 15 minutes. 
Don't overcook.
Once they come out of the oven set them aside to cool.
Once cool, roll them in icing sugar.
These will melt in your mouth.

I can happily say that I have several tins of Christmas cookies and squares still in the freezer.
And a bit more decorating done around here as well.

  2. These are pretty easy and delicious looking. I'm surprised they don't need butter or and egg to hold them together. Thanks for sharing your recipes this week. I like the sap bucket and the greenery on your chandelier. Very pretty! Enjoy the weekend, Donna.

  4. Burlap and instagram - so trendy aren't you. The pecan melts look delicious. I tried some almond balls and they were very tasteless and horrible and I actually threw them out (and I'm not one to do that). Yours look way better.

  5. Mmmmm...I think I will make these, I will need to change the brown sugar to honey but that should be alright, eh? I will need a little more flour which I will change to whole wheat flour. That should work, I think I will give it a whirl. Thanks for the recipe!
